Tuna Melt Fishcakes ๐ŸŸ๐Ÿง€๐Ÿ‹

With the summer almost there I wanted to propose to you a simple preparation that I use frequently as a summer main course or, in multiple doses, as a buffet dish. It is equally delicious served either warm or cold.

Ingredients for 4 people:

  • 200 g of tuna in olive oil
  • 200 g ricotta cheese
  • 100g mozzarella cheese
  • 2 eggs
  • 50 g of pickled capers
  • 100 g breadcrumbs
  • 50 g grated parmesan cheese
  • 1 tablespoon chopped parsley or basil
  • 1 lemon
  • Olive oil
  • salt and pepper

Preparation

  1. Preheat the oven to 180 degrees before beginning preparation.
  2. In a bowl beat the eggs and mix in well the drained tuna with the ricotta.
  3. Add a little salt and pepper, the lemon zest, chopped basil or parsley, Parmesan cheese, the mozzarella diced and half of the breadcrumbs.
  4. Distribute a trickle of olive oil in an ovenproof dish.
  5. Work the ingredients well and, with the help of two spoons and form medium-sized balls, cover these the other half of the breadcrumbs and lay them in the ovendish, keeping them separate.
  6. Put in the oven for 25-30 minutes and serve warm or cold sprinkled with lemon juice and accompanied with a green salad.
