Turkey Fillets with Bacon and Mash ๐Ÿ— ๐Ÿฅ“ ๐Ÿฅ”

This is a quick and filling recipe I like preparing during the cold season as tasty comfort food. The preparation is also suitable for preparation in larger quantities for a festive dinner, with the substitution of the frozen soffritto mix with a proper mincing of celery, onion and carrots and the addition of more varied steamed vegetables, to make it a richer preparation.

Ingredients for 4 people:

  • 600g of turkey fillets
  • 150g of diced bacon
  • 1 glass of white wine
  • Paprika or chilli powder
  • Basil or rosemary leaves
  • 200g of frozen soffritto mix
  • 1 tablespoon of instant mash powder
  • Olive oil
  • Salt and pepper

Preparation:

  1. Gently fry the soffritto mix and the bacon in some olive oil;
  2. When the vegetables are soft and golden add the turkey fillets;
  3. After 5 minutes of cooking on each side add the white wine with the spices, salt and pepper and the chopped herbs;
  4. Take out the turkey fillets and add some instant mash powder to the sauce, regulate for thickness with hot water;
  5. Finish the cooking and serve immediately.

      1. I started mixing up liquids with the mash powder as experimentation, so for example a mixture of water and milk. Then I thought a liquid sauce could also be added to give the mash more taste. If I am preparing some mash as a side for a meat dish I now incorporate in the mash also some of the cooking sauce of the meat. Try and let me know!
